I tried to make kimchi for the first time. First of all, I should say that I don't know how to spell it. When I was young, I thought it was kim chee. But now, I feel like I often see it spelled kimchi. That's the trouble with transliteration! Accepted spellings shift over time. This became relevant when I was searching the internet for a recipe. Different spellings would bring up different recipes!

Anyway, I found a recipe by Emily Han on The Kitchn. It looked easy, so I gathered the following ingredients:

Last Christmas, I was given a fermentation kit with glass weights and an airlock! I was excited to use the airlock. I will admit that sometimes I would just stand in the kitchen and watch the bubbles move around in there. Anytime some gas made it through the airlock, I'd feel a sense of accomplishment.
